It is true that you don't want to repitch yeast from a high gravity (HG) previous batch directly. However, culturing the yeast is fine. In fact, it is probably this exact method that has led to more alcohol-tolerant yeast strains. If it survives a HG fermentation than it will likely be a stronger member of the "society". Of course, you will need to propagate it from a plate to clean out the lesser members of the "society". Mutations are likely so it may not be the same yeast afterwards!

Awsome video. Are there any issues culturing yeast from high alcohol beers using this method? I've heard that the yeast is pretty beat up after fermenting a 9% and up beer and not reuseable.

Looks like the wort is stored in mason jars..their for reserving things..

Here, I'm assuming you are referring to the 1 liter mason jars that I use to pressure can my wort. Once they are properly pressure canned (see my other video), they will last for a LONG time. I cannot say how long because I have not had one spoil but I routinely use them 6-8 months after canning. In theory, they should be good indefinitely. I don't store them in any special manner, just leave them in the pantry at room temp.
